Cauliflower is one of the most versatile vegetables around. You can boil it, steam it, bake it, and roast it. You can use it as an alternative to meat by making cauliflower steaks or cauliflower nuggets. You can rice it and use it in meat sauces, as a replacement for minced meat in tacos, spaghetti, sloppy joes, as a pizza base, or in your mashed potatoes.
And you can soup it.

Creamy, Healthy, Easy Oh My!
Jess says, “Made my OG spiced cauliflower soup this week, but I’ve mixed it up a little and topped it with some panfried halloumi bites. Kind of like croutons but made from cheese… so delish.

The Ingredient List
Serves 4 – 6
- 3 tbsp extra virgin olive oil
- 2 leeks, sliced
- 2 cloves garlic, minced
- 1 tsp curry powder
- 2 heads cauliflower, broken into florets (I used two small heads)
- 4 cups vegetable stock, or water (or 2 cubes)
- Salt and pepper – to your taste
To serve (all optional!):
- 50g halloumi, sliced into small squares
- Extra virgin olive oil
- Chilli flakes
- Dukkah
- Chopped parsley
- Sourdough bread
Step One
Heat the extra virgin olive oil in a large saucepan or crock pot.
Step Two
Add the leeks, curry powder, and garlic to the pan/pot. Season with a large pinch of sea salt and ground black pepper. Sauté for 6-7 minutes or until the leeks are soft.
Step Three
Add in the cauliflower and sauté for 3 minutes. Pour the water or vegetable stock over the top until the cauliflower is just covered. If needed, add a little extra liquid.
Step Four
Boil, reduce heat, and simmer for 20 minutes.
Step Five
Remove from heat and use a stick blender to blend all ingredients. If you don’t have a stick blender, you can cool slightly and use an upright blender.
Step Six
When the soup is almost ready to serve, pan-fry your haloumi pieces in a little extra virgin olive oil until golden.
Step Seven
Drizzle a little olive oil over the soup and top with Dukkah, chilli flakes, chopped parsley, and haloumi croutons to serve.
