Family Food Fast: Chicken and Pineapple Stir Fry

For my family, mid-weeks in winter means cold, late nights following sports training.

Everyone’s tired, the day’s been wickedly long and dinner needs to be on the table, pronto!

This easy Chicken & Pineapple Stir Fry is the answer to good food, fast. With all-fresh ingredients it’s hearty and delicious, yet quick to prepare. Even better,  this stir fry will satisfy the whole crew with its natural sweetness from Aussie pineapples… yum!

Cooking with pineapples this season

This winter there’s a bumper crop of pineapples – you’ll find them plentiful in your local grocery store! They’re affordably priced so why not grab a couple? You’re not only feeding your family a delicious, nutritious food but supporting Aussie farmers in the process.

The Pineapple & Chicken Stir Fry recipe above calls for 1/2 a pineapple but never fear any wastage with pineapples! Use the other half in smoothies, desserts or even freeze it ready for the next time you make this dish. Store leftover pineapple already cut in an air tight container in the fridge and it’ll last a week! #winning

Be sure to add Pure Gold pineapples (that’s the ones without the crown) to your shopping list this week. They’re sweet eating all year round making them the perfect choice – no matter how you choose to enjoy them!
