Pepperoni Pizza Pasta Bake Recipe

What You’ll Need

Serves 4-6

  • 500g potato gnocchi or dried orecchiette pasta
  • 100g sliced pepperoni
  • 1 tablespoon olive oil
  • 1 red onion, thinly sliced
  • 100g button mushrooms, sliced
  • 1 green capsicum, thinly sliced
  • 1 x 400g can crushed tomatoes with basil and oregano
  • Salt and pepper, to taste
  • 1⅔ cups (150 g) Perfect Italiano™ Perfect Pizza cheese
  • ¼ tsp dried oregano
  • ¼ tsp dried chilli flakes (optional)
  • Fresh oregano leaves, to serve

What You’ll Need to Do

  1. Cook gnocchi or orecchiette in a large saucepan of boiling water, until just tender, following the packet instructions.
  2. Put 8 pepperoni slices to the side and cut the remaining slices into quarters.
  3. Heat your olive oil in an ovenproof frying pan over medium-high heat.
  4. Add onion, mushroom, capsicum, and quartered pepperoni. Cook, stirring occasionally, for 5-7 minutes or until vegetables are tender.
  5. Add crushed tomatoes.
  6. Bring to a boil, reduce the heat and simmer, stirring occasionally for 5-7 minutes or until the mixture thickens.
  7. Season with salt and pepper.
  8. Stir in gnocchi and flatten the top.
  9. Preheat your grill to high.
  10. Sprinkle gnocchi with Perfect Italiano™ Perfect Pizza Cheese.
  11. Top with reserved pepperoni, dried oregano and chilli flakes, if you like.
  12. Grill for 4-5 minutes or until cheese is golden.
  13. Sprinkle with fresh oregano to serve.
