You will need:
- 500g [1 bag] green split peas

- 3 garlic gloves chopped finely
- 1 ham hock [1kg]
- 2 medium carrots chopped finely
- 2 celery stalks chopped finely
- 4 fresh thyme sprigs
- 2 bay leaves
- olive oil for frying
- 8 cups water
Rinse peas under cold water in a collander until water runs clear. Drain.
Heat oil in a large frying pan and cook garlic and onion, stirring, until onion softens. Place onion mixture into the slow cooker. Stir in peas and remaining ingredients. Cook, covered on low for 8 hours.
Remove ham from the cooker. When cool enough to handle, remove the meat from the bone, shred coarsely and return the shredded meat to the slow cooker. Discard skin, fat and bone. Season soup to taste. Serve hot.
