It’s packed full of flavour and slow-cooked to fork-tender perfection.

Your casserole is only as good as your stock because that’s where the flavour comes from. Make sure it’s a quality stock like Campbell’s liquid stock! They’re a super handy pantry item with a long best-before date so it never hurts to keep a few in the pantry on hand!

Below is a basic recipe for a yummy beef casserole and it’s absolutely a great version to introduce to the family. You can bet these soft potatoes and tender beef wrapped in a flavour-packed gravy will be eaten with gusto! However, you can absolutely add some extra veggies into the pot (at the same step as adding the potatoes) for even more deliciousness. Try adding carrot, sweet potato, mushrooms or even green beans to pack some added nutrition and flavour into the pot!

Hearty easy-prep beef casserole recipe

Serves: 6
Prep Time: 10 minutes
Cook Time: 90 minutes

Ingredients

  • 2 tbsp olive oil
  • 1kg beef chuck steak
  • 2 onions, coarsely chopped
  • ½ cup tomato paste
  • 650g potatoes, peeled and quartered
  • 1L (4 cups) Campbell’s Real Stock Beef
  • Salt and pepper
  • Steamed rice and finely chopped parsley to serve

Method

  1. Preheat the oven to 160°C. Heat the olive oil in a large heavy-based Dutch oven or oven-proof casserole pot. Add the beef and cook, over medium heat for three to four minutes until the meat is sealed and starts to brown a little.
  2. Add in the chopped onion and cook, stirring for a further two minutes.
  3. Add to the casserole pot the tomato paste and potatoes and stir to combine. Pour in the Campbell’s Real Beef Stock, stir and bring to a boil. Cover the pot with a tight-fitting lid and place it in the oven to cook. Cook covered for one and a half hours, then remove the lid and cook for a further fifteen mins in the oven to reduce the liquid.
  4. Season to taste with salt and pepper. Serve this casserole with steamed rice and finely chopped parsley to garnish – and don’t forget some crusty bread to mop up the gravy!

Want to try it in the slow cooker?

If you want to try this beef casserole recipe in the slow cooker, why not give it a shot? Though it hasn’t been tested, the general rule of thumb is to place root vegetables on the bottom of the slow cooker pot (where it is the hottest) and then brown your meat in a frying pan, then add it on top of the vegetables. Reduce liquids to ¾ as it won’t reduce as much as it would in the oven. Cook for 9 hours on low.
