I had three HelloFresh meal kits for a family of four delivered. I’ll admit that I’m a little nervous due to the fact I do have a fussy eater to feed. He’s the kind of fussy eater who enjoys the same old favourite meals, so much so that I find myself taking short order dinner requests just for him every night. This is equally annoying as it is time-consuming.

RECIPE: Vietnamese Style Pork Tacos
SERVES: 4-5 PEOPLE
TIME: 30 MINUTES
YUM RATING: 10/10
FIRST IMPRESSIONS: To be fair, anything wrapped in a tortilla is going to be a winner, but this Vietnamese-Style Pork Taco recipe takes the trophy for deliciousness. Full of flavour and plenty of salad crunch, we’re all happy diners.
My kid (yes, the fussy one!) does say he thinks the cos lettuce is “weird“, but I forgive his Iceberg-lettuce-loving-heart when he tries it anyway. As a result, I give myself my best Matt Preston nod and a pat on the back for creating a delicious (and different) dinner.
Ingredients:
- Olive oil (pantry item)
- 1 brown onion
- 4 cloves garlic
- 1 bunch of mint
- 1 head of cos lettuce
- 100g snow peas
- 1 lemon
- 1 carrot
- Long red chilli (optional)
- 100g garlic aioli
- 500g pork mince
- 75g kecap manis
- 2 tbs soy sauce (pantry item)
- 12 mini flour tortillas
Method:
- GET PREPPED. Finely chop the garlic (or use a garlic press). Finely chop the brown onion. Pick and roughly chop the mint leaves. Shred the cos lettuce. Trim the snow peas, then thinly slice into matchsticks. Zest the lemon to get a generous pinch of zest. Grate the carrot (unpeeled). Thinly slice the long red chilli (if using).
- MAKE THE LEMON AIOLI. Juice the lemon to get 2 tsp of juice. In a small bowl, combine the garlic aioli and lemon juice. FUSSY TIP: Leave some of the garlic aioli plain for the kids if you like! Taste and add more lemon juice if needed. Season with salt and pepper. Mix well to combine and set aside.
- COOK THE VEGGIES. Heat a large frying pan over medium-high heat with a drizzle of olive oil. When the oil is hot, add the onion, carrot, garlic and a pinch of salt. Cook, stirring until slightly softened, 2-3 minutes.
- COOK THE PORK. Increase the heat to high. Add the pork mince to the frying pan and cook, breaking up with a spoon until just browned, 3-4 minutes. Remove the pan from the heat and add the kecap manis, soy sauce and lemon zest. Stir until combined, 1 minute. Season to taste with salt and pepper.
- HEAT THE TORTILLAS. Heat the mini flour tortillas in a sandwich press or on a plate in the microwave for 10-second bursts, until warmed through.
- SERVE UP. Bring everything to the table to serve. Spread a thin layer of lemon aioli over a tortilla. Add a helping of cos lettuce, snow peas, and the Vietnamese-style pork. Top the adults’ portions with the mint and chilli (if using). Enjoy!

FIRST IMPRESSIONS: I’m pretty excited about the Mexican Beef and Bean Rice Bowl recipe to be honest. We love Mexican food and this dinner has a definite Tex-Mex vibe. The beef is packed with sneaky veggies (zucchini, carrot, capsicum and onion, oh my!) and bulked out with red kidney beans. Love, love, love the addition of charred corn – it’s SUPER easy to cook and fussy eaters can’t resist digging a fork into those sweet and juicy kernels. #getinmybelly Â
Creamy Honey Mustard Chicken
SERVES: 4-5 PEOPLE

YUM RATING: 8/10
FIRST IMPRESSIONS: I saved the Creamy Honey Mustard Chicken (with herby mash and steamed veggies) recipe until last because, let’s be honest, vegetable consumption in my house can be a little bit of a struggle. The beans aren’t such a big hit for two of the family, however, when rolled in the sauce, they’re reported as “not as bad” (insert my eye-roll here). Kudos to HelloFresh for using thigh meat in this recipe instead of the popular breast, it’s beautifully tender and full of flavour. Â
What does my family think about HelloFresh?
Honestly, we love it. The HelloFresh family meals are REALLY fussy-eater and kid-friendly. The flavours are beautiful and there was nothing to provoke a flat-out refusal of “nup, not eating it“. My husband loved the variety of HEALTHY meals and my fussy eater ate everything that was offered, with the exception of all the beans. Hey, still a win in my book! As for me, I loved knowing that a fresh, quick dinner was sorted and ready to be cooked – without any brain strain on my part. I loved that the HelloFresh discount code made it easy to test to see if it was right for my family.
With each of the recipes in my HelloFresh box, I had dinner on the table in around 40 minutes (even quicker when I could multi-task). Which, considering I had to put absolutely no thought into it, is pretty darn good!
