No Bake Chocolate Mousse Cake Recipe

Here is what you’ll need:

  • 2 bottles of Yakult LIGHT
  • 200g sugar-free Digestive biscuits
  • 100g butter, melted, cooled to room temperature
  • 3 tablespoons chocolate spread
  • 300ml thickened cream
  • 3 egg whites*
  • 3 tablespoons caster sugar
  • Berries to serve

* An alternative for egg whites for babies or pregnant women would be to include gelatin or aquafaba

Here is what you’ll do:

  • Line a 20cm springform pan with baking paper on the base and around the edges.
  • Process the sugar-free digestives in a food processor until finely crushed. Add butter and pulse to combine. Press over the base of the pan.
  • Place in the fridge to chill for 15 minutes or until firm.
  • In a large bowl, add thickened cream, and using an electric beater on medium speed, whip until firm.
  • Add 2 x bottles of Yakult LIGHT and whip for a further 2 minutes.
  • In a separate bowl, add sugar to egg whites, and whip until firm peaks form.
  • Soften the chocolate spread in the microwave, in 10-second bursts (until it has softened, but not heated).
  • Add chocolate spread to cream and fold through until just combined.
  • Fold egg white mixture into the cream, lightly, until just combined.
  • Pour the mousse mixture into the biscuit base. Refrigerate for overnight.
  • To serve, garnish with your favourite berries.
