Recipe: Grilled Quesadilla

Sandwiches don’t need to be the same every day. Using a flat bread and toasting it adds variety and also lets your child enjoy new flavours. Check out one of our favourite quesadilla receipes below.

Makes: 1 | Prep time: 4 minutes | Cook time: 2 minutes

Ingredients:

1 flat bread (burrito, mountain bread, wrap etc)
1/2 tin of tuna
1/4 tin of kidney beans
1 small handful cheese
1/2 an avocado

Method of preparation:

Step 1: Preheat a frypan over a medium heat.

Step 2: To make the quesadilla, mash the kidney beans in a bowl and stir through the tuna and cheese.

Step 3: Spread the mixture on half of the flat bread, then fold it in half and add to a sandwich press to grill until beautifully golden.

To serve:

Cut in to triangles and serve with the avocado smashed on top or the side.

To store:

They store great in an airtight container in the fridge for a few days or in the freezer for a month. Just make re-grill them when you’re ready to eat them.

A Healthy Mum Nutritional tip:

Beans are not only great tasting but they’re packed full of protein and iron too, perfect for kids to enjoy at school to help them power through the afternoon.
