Recipe: Apricot Bliss Balls

Often store bought balls are full of preservatives and extra sugar, these quick and easy Apricot Bliss Balls use none of that and will have you licking your fingers.

Makes: 15 | Prep time: 5 minutes | Cooking time: 2 mins

Ingredients:

1 cup (15 large) sulpha free dried apricots, soaked in 2 cups of hot water for 30 minutes
3/4 cup whole oats
1/4 cup desiccated coconut, extra for dusting
1 tbsp coconut oil

Method:

Step 1: Combine all ingredients in a blender and pulse until it comes together in to a ball, this will take a minute or two.

Step 2: Add the extra coconut to a plate and with wet hands shape the mixture in to balls and then, roll in the coconut.

To store: They store great in an airtight container in the fridge for 3 weeks or the freezer for a few months.

A Healthy Mum Nutritional Tip:

It’s really important to source “sulpha free” (E220 or 220) dried fruit, especially apricots. They won’t be the typical bright orange you’re used to, they’ll be darker brown in colour and also a bit firmer.  Reason being, sulpha use has been linked to asthma, irritability, mood swings and many behavioural problems, so please stay away.
