RECIPE: Raw (and Vegan Friendly) Lamingtons

If my Insta feed is anything to go by, raw desserts are the next big food thing. Not that I’m complaining. Dessert is much more justifiable when it’s practically a health food.

Not only raw, this lamington recipe is suitable for vegans too. Miss out on a lamington no longer guys, this one’s for you! And just in time for Australia Day!

No need to turn the oven on, you just need the stove top and a blender to get busy (and hungry!).


Raw Lamingtons with Sprouted Chia and Blackberry Jam recipe

Ingredients:

  • 3 cups raw cashew nuts (or activated)
  • 1½ cups desiccated coconut
  • ¾ cup coconut cream
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • 3 cups shredded coconut

Sprouted chia and blackberry jam ingredients

  • 250g frozen blackberries
  • 1½ tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 tablespoon Fermentanicals Organic Sprouted Chia

Cacao icing ingredients

  • ¼ cup coconut cream
  • ½ cup cacao powder
  • ¼ cup coconut oil, melted
  • ¼ cup cacao butter, melted
  • 2 tablespoons maple syrup
  • ½ teaspoons rock salt

Method:

  1. Place cashews in food processor and process until finely chopped. Add the desiccated coconut, coconut cream, coconut oil, maple syrup and blend until mixture comes together.
  2. Spoon mixture into lined tin, press in firmly and level. Refrigerate until firm, approx. 1-2 hours.
  3. Place all the jam ingredients into a small saucepan over medium heat. Simmer and stir for 12-15 minutes or until thickened. Refrigerate until chilled.
  4. Remove cashew sponge from the tin and cut in half, spread one layer with chilled jam and place the second cashew sponge on top, sandwich style – freeze until jam is firm.
  5. To make the cacao icing, place all the ingredients into a bowl and whisk to combine. Set aside.
  6. Remove lamington from freezer, cut into 3cm squares, trim the excess as needed. Place a lamington on a fork and spoon over cacao icing until covered. Sprinkle and press on shredded coconut. Repeat with remaining pieces.
  7. Serve immediately or place in fridge until you are ready to eat!
