How to make salted caramel cheesecake in a cup

IngredientsÂ
- 80g sweet biscuitsÂ
- 40g pretzelsÂ
- 2 tbs McKenzie’s Shredded Coconut, lightly toastedÂ
- 40g butter, meltedÂ
- 1 tsp McKenzie’s Gelatine PowderÂ
- 2 tbsp boiling waterÂ
- 250g cream cheese, cubed and softenedÂ
- â…” cup creamÂ
- ¼ cup caster sugarÂ
- ¼ cup bought caramel sauceÂ
- Extra pretzels, caramel sauce and McKenzie’s Shaved Coconut, for servingÂ
MethodÂ
- Place biscuits and pretzels in a food processor and pulse until fine crumbs. Remove to a bowl and combine with the coconut and the melted butter, mix well. Spoon between 6 serving glasses and chill.Â
- Combine gelatine and water in a small heat-proof dish, and mix well. Place into the microwave for 20 seconds, remove and allow to cool.Â
- Place cream cheese, cream and sugar in the bowl of an electric mixer and beat until smooth. Add the gelatine mixture, mixing in well. Fold in the caramel sauce and spoon between serving glasses, cover and chill for at least 1 hour.
- For serving; top the cheesecakes with some more pretzels, additional caramel sauce and shaved coconut.Â
Tip: These can be prepared the night before and decorated just prior to serving.
