Individual Salted Caramel Cheesecakes with Pretzels (Serves 6)

Indulge in the perfect balance of sweet and salty with our salted caramel cheesecake topped with a pretzel garnish. This decadent dessert is a delightful combination of smooth and creamy cheesecake infused with a rich salted caramel sauce, perfectly complemented by the crunchy pretzel topping.

We love it any time of the year, but it’s also a great one to make for mum on Mother’s Day or to serve as part of a Mother’s Day afternoon tea if you’ve got people coming over to celebrate the day.

The creamy cheesecake filling is made with high-quality ingredients and a buttery biscuit crust that complements the flavours of the salted caramel and pretzel.

How to make salted caramel cheesecake in a cup

  • Preparation Time: 20 minutes
  • Cook Time: 5 minutes
  • Makes: 6 

Ingredients 

  • 80g sweet biscuits 
  • 40g pretzels 
  • 2 tbs McKenzie’s Shredded Coconut, lightly toasted 
  • 40g butter, melted 
  • 1 tsp McKenzie’s Gelatine Powder 
  • 2 tbsp boiling water 
  • 250g cream cheese, cubed and softened 
  • â…” cup cream 
  • ¼ cup caster sugar 
  • ¼ cup bought caramel sauce 
  • Extra pretzels, caramel sauce and McKenzie’s Shaved Coconut, for serving 

Method 

  1. Place biscuits and pretzels in a food processor and pulse until fine crumbs. Remove to a bowl and combine with the coconut and the melted butter, mix well. Spoon between 6 serving glasses and chill. 
  2. Combine gelatine and water in a small heat-proof dish, and mix well. Place into the microwave for 20 seconds, remove and allow to cool. 
  3. Place cream cheese, cream and sugar in the bowl of an electric mixer and beat until smooth. Add the gelatine mixture, mixing in well. Fold in the caramel sauce and spoon between serving glasses, cover and chill for at least 1 hour.
  4. For serving; top the cheesecakes with some more pretzels, additional caramel sauce and shaved coconut. 

Tip: These can be prepared the night before and decorated just prior to serving.
