Easy Honey Lime Chicken Skewers Recipe – a Sweet and Zesty BBQ Hit!

Hands up if you’re spending most of your weekends by the BBQ this summer. SAME. This chicken skewers recipe is sure to be a hit in the summertime lineup – it’s just the right amount of sweet and tangy, tastes like a holiday and the whole family will love it!

I think we can agree that everything tastes better on a stick, right? RIGHT. And chicken skewers are an awesome way of convincing kids to try something new… because, resisting the stick is futile.

Not just for the BBQ…

When the kids fall in love with this honey and lime chicken skewers recipe, you can just as easily cook it in the cooler months (without the stick) or freezing outside hovering over the BBQ. Simply dice, marinade and cook it in a frying pan, serving it on a bowl of rice and some delicious greens (if your kids aren’t averse to veggies). YUM.

A word on the tangy lime

Not everyone automatically loves lime so it’s good to err on the side of caution and resist squeezing extra juice. Start with just enough to cut through the sweetness of the honey.

Chicken breasts or thighs?

I know there are people who use chicken breast for everything – which is fine – BUT for chicken skewer recipes, I swear that if you cross to the dark side of chicken thighs, you won’t look back. Chicken thigh is not only delicious, but it’s also much moister and doesn’t dry out nearly as much as chicken breast can. So please, for the love of BBQ, give the thighs a chance for a chicken skewers recipe!


Honey lime chicken skewers recipe

Ingredients

  • 1kg of skinless chicken thighs
  • 3 tbsp soy sauce or tamari
  • 7 tbsp honey
  • 2-3 tbsp fresh lime juice
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, finely grated
  • 1 tbsp oil
  • 1 tsp salt
  • ½ tsp cornflour
  • Skewers
  • To serve: chopped coriander or parsley, fresh lime wedges (optional)

Method

  1. If using wooden skewers, soak these so that they are completely covered in water while you prepare the chicken. Soaking the skewers prevents them from catching on fire on the BBQ!
  2. Trim the chicken thighs of excess fat and cut them into small bite-size pieces. Place the chicken in a zip-lock bag.
  3. Mix all of the remaining ingredients – except for the cornflour –  in a bowl, whisking them together until combined.
  4. Pour half of the marinade in with the chicken in the zip-lock bag. Set aside the remaining marinade. Push the air out of the zip-lock bag, seal it and push the marinade around the chicken by ‘massaging’ the bag. Place the bag in the fridge for 30 minutes to marinate. Preheat the BBQ to medium heat.
  5. Skewer the chicken onto the skewers, being careful to wipe excess marinade off of the skewers. Honey naturally caramelises under extreme heat – so the excessive marinade will cause a charred crust to your chicken which isn’t always everyone’s cup of tea.
  6. Lightly oil the BBQ plate and whisk the cornflour into the remaining marinade you set aside earlier. Place the chicken on the BBQ and resist turning it until it has been sealed and no longer sticks to the BBQ plate.
  7. Glaze the chicken skewers a few times while cooking with the marinade. Once cooked on all sides and cooked through, remove from the heat and rest for five minutes, loosely covered with alfoil.
  8. Sprinkle with chopped parsley or coriander and extra wedges of lime if your family loves a bit of zestiness!

It’s worth noting that this chicken is also lovely served cold and tossed through salad – so keep any leftovers!
