Recipe: Banana, Oat and Date Cookie Recipe

A great use for brown bananas these Banana, Oat and Date Cookies will be a hit either in the kids lunchbox or over a nice cup of tea for yourself. Here’s a quick and easy cookie recipe that will have you licking your lips in no time!

They store great in an airtight container in the cupboard for a week or the freezer for a few months.

The oats are a great source of fibre that not only fills you up, but also delays the stomach emptying too quickly, keeping you fuller for longer.

Makes: 18  |  Preparation time: 10 minutes  |  Cooking time: 25 minutes

Ingredients:

1 cup smashed ripe bananas
1/2 tspn ground cinnamon
2 cups whole oats
1/2 cup desiccated coconut
1/4 cup chopped dates or raisins
3 tbsp pure maple syrup or honey
2 tbsp butter or coconut oil

Method of preparation:

Step 1: Preheat oven to 170c and line 2 cookie sheets with parchment paper and then set aside.

Step 2: Combine all the ingredients in a bowl and mix together well with your hands, squeezing the mixture together so that it binds.

Step 3: With wet hands, form the cookies and then place on the trays. Bake in the oven for 25 minutes or until golden.
