Because I can be a little too last minute (some might say frenzied) when it comes to cooking for a crowd, I do love a dessert that you make in advance for when you actually need it – and chocolate mousse ticks ALL of those boxes. It’s a no-bake dessert that never disappoints and is perfect for every chocolate lover out there.
The ultimate chocolate mousse recipe
You don’t need a lot of things, most of them you likely already have! This recipe is a traditional recipe containing eggs – which IS needed for that foamy, aerated mousse texture. Without the egg, mousse falls flat and though still delicious, it’s more akin to a chocolate custard.

So without further ado, grab your handheld electric beaters, get whisking and in less than half an hour you’ll have your mousse setting in the fridge!

Serves 4
Ingredients
- 3 eggs
- 125g dark cooking chocolate
- 10g butter
- ½ cup cream
- 3 tablespoons caster sugar
To decorate
- Flake (or chocolate shavings)
- Fresh berries
Method
1. Start with the eggs! Carefully separate the eggs and yolks. Place the egg whites in a large bowl and the egg yolks in a medium-size bowl, whisk the yolks and set aside.
2. Melt the butter and chocolate together in a glass, microwave-safe bowl. Heat on high 20 seconds at a time, stirring between each heating burst, until smooth. Set aside to cool slightly.
3. In a medium-size bowl, whip the cream to stiff peaks, set aside. Add the caster sugar to your egg whites and whip them together until firm peaks form, set aside.
4. It’s time to fold! Pour the whisked eggs into the cream and fold until it’s just mixed in.
5. Pour your lukewarm chocolate into the creamy egg yolk mixture and fold together until just mixed through. Streaks in the mix are fine, easy does it!
6. Take about ¼ of your whipped egg whites and add it to the chocolate mixture. Gently fold it through the chocolate mixture until no more white lumps remain. Do fold with a gentle hand, you don’t want to knock the air out completely!
7. Finally, pour that chocolate mixture into the larger bowl containing the remaining whipped egg whites and gently fold it through until there’s no white lumps or streaks. Hooray, you did it!
8. Spoon the mixture into four ramekins (or one big bowl for sharing). Smooth the top of the mousse over and sprinkle chocolate shavings over the top and top with fresh berries. Place in fridge to set for at least a few hours or overnight.
9. Once the chocolate mousse cups are set, dig in and enjoy that pillowy soft chocolate mousse dessert – so YUM!
