Just Scoop and Stuff These Babies!

When stuffing Qukes ® baby cucumbers, you do have to scoop out a good portion of the seeded flesh. But don’t throw it away! You can keep it in the fridge for throwing in your smoothie blends later on. Nothing has to go to waste with these guys, you can even freeze the flesh in ice cubes for future smoothies.

mum centralHOT TIP: You can scoop the flesh out of Qukes® really easily by using 1/4 teaspoon measuring spoon – it’s just the right size to run down the length of these baby cucumbers!

1. Stuffed Qukes ® in Blankets

Stuffed qukes in blankets

Ingredients

  • 1 packet of Qukes ®
  • ½ cup spreadable cream cheese
  • 1 carrot, grated
  • 6 mild salami slices (or use chicken or ham slices!)
  • Toothpicks

Method

  1. Slice the Qukes ® in half lengthways and scoop the middle out.
  2. Fill one half of each Qukes® with cream cheese.
  3. Top the cream cheese with grated carrot.
  4. Pop the remaining halves on top of the filled ones, carefully!
  5. Wrap in a salami slice and secure with toothpicks. YUM!

2. Dip-Stuffed Qukes ®

Ingredients

  • 1 packet of Qukes ® baby cucumbers
  • 3 dips (we used beetroot hummus, corn relish and olive dip)
  • 3 yummy dip-matching toppings for texture and garnish (toasted pine nuts, corn kernels and chopped olives)

Method

  1. Slice the Qukes ® in half lengthways and scoop the middle out.
  2. Fill one half with the yummy dips of your choice.
  3. Top teach stuffed half with corn kernels, pine nuts and olives for added yumminess and crunch!

3. Tuna Stuffed Qukes ®

Tuna stuffed Qukes

Ingredients

  • 1 packet of Qukes ® baby cucumbers
  • 200g tuna, drained and flaked
  • 1 tablespoon red onion, finely chopped
  • 1 tablespoon red capsicum, finely chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon seeded mustard
  • Toothpicks

Method

  1. Combine the tuna, onion, mayo, mustard and capsicum in a bowl and mix, mix, mix!
  2. Slice the Qukes ® in half lengthways and scoop the middle flesh out.
  3. Fill half of all the Qukes® generously with the tuna mixture and sandwich the empty halves on top.
  4. Carefully secure with toothpicks and serve ready for lunch!
