Planning a birthday party, a christening celebration or baby shower and want coordinating coloured donuts? Perhaps you just want to spoil the kids with a delicious baked (not fried) treat? You can totally bake your own vanilla donuts at home, and they’re easier than you think!
Donut tins are everywhere!
Donut tins are really easy to find these days, making baking donuts at home a real cinch (and a hole lot of fun to create with the kids. … see what I did there?) Head to Kmart to pick up their Kmart 6-Cup Donut Pan, $5 or if you prefer minis, check out the Wilton 12 Cavity Donut Pan, $30 at Spotlight. You can use this recipe for either tin – you’ll just get fewer donuts from the mixture if using a big tin and will have to cook a few minutes longer!
Because these vanilla donuts are baked (and not fried) they’re more like a cake texture instead of traditional dough. Nonetheless, they’re bursting with vanilla flavour, easy to handle AND they look super cute and mighty delicious on the party table!
Baked Glazed Vanilla Donuts Recipe
Makes: 24 mini donuts
Ingredients
- 2 2/3 cups plain flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 60g butter, melted
- ¼ cup vegetable oil
- ¾ cup sugar
- 1 ½ teaspoons vanilla paste
- 2 eggs
- 1 cup milk
Vanilla glaze
- 1 ½ cups icing sugar
- 3 tablespoons butter, melted
- 3 tablespoons milk
- 1 teaspoon vanilla essence
- Food colouring (I love Americolour brand for vibrant colours)
- Sprinkles
Method
1. Grease a mini donut tin with butter or a cooking oil spray. Preheat the oven to 180°C.
2. In a bowl, combine the flour, baking powder, baking soda and salt. Stir together to mix through.
3. Using electric beaters and a large mixing bowl, mix together the vegetable oil, sugar and butter until smooth (around 30 seconds).
4. Add the eggs one at a time, beating well between each addition. Beat in the vanilla paste.
5. Add a third of the flour to the mix, beating until just combined. Add half the milk and mix in. Repeat with the second third of the flour and the remaining milk. Beat in the final third of the flour.
6. Using a piping bag (or snap-lock bag) or a spoon, fill the donut tray cavities until just over half full. If using a mini tray, you will need to do this in two batches. Cook for around 10 minutes or until cooked through.
7. Transfer the vanilla donuts to a wire rack to cool to lukewarm before glazing.
8. To make the glaze, whisk together the glaze ingredients until smooth. Colour with food colouring if you wish. Transfer to a shallow bowl.
9. Dip the vanilla donuts in the glaze and quickly flip over, placing them on the wire rack. Leave for around 20 seconds before sprinkling with sprinkles (or they’ll run off). Leave to set at room temperature. If the glaze becomes too thick, warm in the microwave for 5 to 10 seconds, stirring for a thinner consistency.
Keep these baked vanilla donuts in an airtight container for up to a week. Unglazed doughnuts can be frozen.
