It can sometimes be a real chore getting fruit into the mouths of children, but yoghurt is a fabulous carrier and if you FREEZE it – well suddenly it’s a super fun snack to have after school! Plus with this recipe, you can feel extra smug getting some extra goodness into their guts by incorporating digestive-boosting Yakult. Win, win!

If you’re not familiar, Yakult is a tasty Probiotic fermented milk drink containing a very high concentration of the unique bacterium Lactobacillus casei Shirota strain (LcS).  In a nutshell, this strain is scientifically proven to survive the journey through the gastric juices to reach the small intestine alive, and each of the 65ml bottles contains 6.5 billion of these highly acid-resistant bacteria. Frozen Fruity Yoghurt Bark – The Clever Snack with a Cheeky Twist!

Ingredients

  • 2 cups Greek-style yoghurt
  • 4 Yakult bottles
  • 2 tablespoons maple syrup
  • Kiwi fruit
  • Blueberries
  • Strawberries
  • Nectarine or peach

Method

  1. Slice your favourite fruits into bite-sized pieces or slices!
  2. Whisk together the Greek-style yoghurt, maple syrup and Yakult.
  3. Line a baking tray with baking paper.
  4. Spoon the yoghurt mixture onto the tray.
  5. Top the yoghurt mixture by decorating it with all of your favourite chopped fruit!
  6. Freeze the yoghurt tray overnight.
  7. Once frozen, use a sharp knife to cut the slab into shards.
  8. Serve straight away!

TIP:  Keep any uneaten frozen bark in an airtight container in the freezer to eat later!
