You can’t beat Perfection

Perfection Fresh Qukes® Baby Cucumbers are the go-to cucumber snack we all need. Australian grown, with tender, crisp skins, they’re brilliant for snacking on the go or as a quick and light option to tide little one’s over until dinner. They can even be amped up and stuffed. Just as we did here!

We took packs of Perfection Fresh Qukes® and turned them into three sensational dishes that we know you’ll WANT to try!

Qukes baby cucumbers

What you need

  • 1 pack Qukes® baby cucumbers
  • ⅓ cup fresh lime juice (about 4 small limes)
  • ¼ cup caster sugar
  • 2 ½ cups water
  • 1 tbs fresh mint, chopped
  • Ice block moulds and pop sticks

What to do

  1. Roughly chop three Qukes® and thinly slice the remaining Qukes®.
  2. Blitz the chopped Qukes® with a stick blender until smooth.
  3. Push the blended Qukes® through a fine sieve into the jug of water.
  4. Add the lime juice!
  5. Followed by the refreshing mint!
  6. Add the sugar. Keep stirring until dissolved. Adults only tip: Add tequila for a margarita-pop!
  7. Add the cucumber slices to the ice block mould cavities.
  8. Pour into your ice block mould and freeze overnight.
  9. Remove ice blocks from mould and get ready to lick and slurp these cool ice blocks!

Qukes baby cucumbers

What you need

  • 1 pack Qukes® baby cucumbers
  • 1 cup plain flour
  • 2 eggs
  • 1 cup panko crumbs
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • 2 tablespoons sweet chilli sauce
  • 1 tsp salt

What to do

  1. Cut the Qukes® into quarters into long wedges.
  2. Combine the salt with the flour and lightly whisk eggs.
  3. Dip each Qukes® wedge into the flour, then egg, then the panko crumbs.
  4. Heat enough oil to shallow fry over medium heat in a frying pan.
  5. Fry until golden brown and set aside on a paper towel.
  6. Make a quick, tasty dipping sauce! Mix together the mayonnaise and sweet chilli sauce.
  7. Dip and munch, YUM!

Qukes baby cucumbers

What you need

  • 1 pack of Qukes®
  • 2 mini tortillas
  • 1 tsp minced garlic
  • 1 tbsp olive oil
  • 1 ripe avocado
  • ¼ – ½ a red onion
  • 1 lime
  • Red chilli and coriander to serve
  • Salt

What to do

  1. Heat a frying pan to medium heat.
  2. Cut the mini tortillas into quarters.
  3. Combine the garlic and olive oil, brush the tortillas on both sides.
  4. Fry until brown. Allow to cool completely over a rolling pin. (Spoiler alert: they’re curled!)
  5. Guacamole time! Scoop the avocado into a bowl and mash with a fork.
  6. Finely dice the red onion and mix into the avocado.
  7. Add a pinch of salt, a squeeze of lime and MIX!
  8. Slice Qukes® down the centre longways BUT not all the way through!
  9. Fill each Qukes® (like a hot dog) with guacamole.
  10. Plate up the tortilla chips and place a guac Qukes® on each.
  11. Top with finely sliced red chilli and coriander.
  12. Add lime wedges to serve and enjoy!
