Who said you can’t combine your favourite dip and side dishes into one epic dish? This Guacamole bacon devilled eggs recipe is the ultimate way to eat your smashed avo – complete with a tasty hint of Mexican flair. Devilled eggs recipe given a smashed avo makeover

Perfect for anyone following a low carb diet or just wanting to lift their side dish game for the upcoming BBQ season, you HAVE to check out this devilled eggs recipe! It’s a guacamole-meets-bacon-meets-egg hybrid side dish, sure to wow your friends and family – and we’re totally here for it!

Makes 12

Ingredients

  • 6 large eggs, hard-boiled and cold
  • 4 streaky bacon rashers, cooked crisp and crumbled, plus a little extra for garnish.
  • 1 large Hass avocado, peeled, pitted and cubed
  • 2 tablespoons of salsa
  • 2 cloves of garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon of dried onion flakes (or finely cut a red Spanish onion)
  • 1/2 teaspoon of sea salt
  • pinch of cayenne pepper

Method

  1. Carefully remove the shell from the hard-boiled eggs. Using a sharp knife, slice the hard-boiled eggs in half and pop the yolks out into a large mixing bowl.
    TIP: To keep your cuts clean and not tear the egg white, wipe the knife clean after slicing each egg!
  2. Using a fork, mash the yolks. Add in the cooled crumbled bacon, the cubed avocado, salsa, minced garlic, lime juice, onion flakes, salt and cayenne pepper.
  3. Mash the ingredients all together with the fork, mixing them as you go to incorporate them well.
  4. Put the smashed avo and egg mixture into a piping bag (or a large zip-lock bag) and set it aside while you arrange the hard-boiled egg whites on a serving plate.
    TIP: Use shredded lettuce to create a ‘bed’ to keep the eggs in place and stop them from slipping around the plate.
  5. Push the egg mixture into the corner of the piping bag (or zip-lock bag) and snip the corner off. Carefully pipe the mixture back into the boiled egg white halves, dividing it evenly so all eggs are roughly the same.
  6. Once they’re piped, top each egg with a sprinkling of extra bacon crumbs.
  7. Cover with plastic wrap and keep cold in the fridge until ready to serve. Yum!
